With the mango season kickstarting in its full glory, chances are that you must have started devouring the season’s first mangoes. The sweet aroma and juicy taste of mangoes make harsh summers bearable. From incorporating them in salads or achaar or just relishing them as it is, there’s so much you can do with this delicious fruit. Amidst this, actor Bhagyashree took to her social media to share an eggless mango cake recipe.

Taking to her Instagram, Bhagyashree shared an easy eggless mango cake recipe. She wrote, “Mango Time!!! Enjoy the rich goodness of mangoes while they last. Have them cut, as a pulp, as a shake, bake cakes, add them to puddings, make achhar, salads…. any way you want but enjoy its goodness. High on Vit A, C and full of antioxidants, this high-energy fruit can be just the thing you need to elevate your mood.”

Instructions

Step 1: Start by combining ½ tsp of vinegar with a cup of milk. Stir the mixture well and set it aside to curdle slightly.

Step 2: In a separate bowl, mix one spoonful of ghee into a cup of finely ground oats to create a smooth batter base.

Step 3: Chop 3-4 dates and add them to the oat mixture. Stir in a generous scoop of mango pulp, followed by a spoonful of baking powder.

Step 4: Gradually, pour in the curdled milk while whisking continuously to achieve a smooth and uniform consistency.

Step 5: Lightly grease two baking tins with olive oil. Evenly divide the mango-oat batter between them.

Step 6: Bake in a preheated oven at 180°C for about 30 minutes or until golden and set. Once cooled slightly, top with freshly chopped mangoes for a fruity, summery finish.
